I truly hate throwing food in the trash. It’s so wasteful and makes me feel so guilty. Bananas are a staple in our home, and always the first to start browning. As I hear, “SAVE THE BANANAS” screaming from deep within me, I can’t help but to whip up some sort of muffin or loaf for the kids to come home from school to.
I usually try to stick with ingredients I already have in the house. Whatever I have goes in, whatever I don’t, stays out!
This time I was out of brown sugar so I opted to sweeten naturally with honey and the results were heavenly. This is now my go-to recipe. The only downfall, I couldn’t stop eating it!
Yummy Honey Banana Bread (That’s super healthy, too!)
• ⅓ cup melted coconut oil
• ½ cup honey
• 2 eggs
• 1 cup mashed bananas (about 2 bananas)
• ¼ cup water
• 1 teaspoon baking soda
• 1 teaspoon vanilla extract
• ½ teaspoon salt
• ½ teaspoon ground cinnamon
• 1¾ cups regular whole wheat flour
Preheat oven to 325° and grease a 9×5-inch loaf pan.
In a large bowl, beat the oil and honey together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas and water.
Add the baking soda, vanilla, salt and cinnamon, and whisk together. Switch to a spoon and stir in the flour, just until combined. Some lumps are ok!
Pour the batter into your greased loaf pan. If you love cinnamon as much as we do, sprinkle some extra on top!
Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the loaf pan for about 10 minutes, then transfer it to a wire rack to cool for 20 minutes or so before slicing.
