Delicious & Summery Grilled Brussels Sprouts Recipe

Summer is my season. The warmth from the sun soothes my soul and being outdoors all day makes me happy. If I could sleep outside, I would!

I hardly cook indoors once the weather is warm enough to grill. I used to be afraid of the BBQ, but I now man the grill most nights! It’s so simple to do an entire dinner with hardly any cleanup. Once I became comfortable enough, I realized I could cook my veggies alongside the protein.

My favourite vegetable to grill is Brussels sprouts. My 8-year-old loves them as well. I skewer them because they’re super easy to handle that way. Just make sure you soak your skewers ahead of time to keep them from them splintering.

 

Brussels on the Barbie

 

Ingredients

1 pound of Brussels sprouts

2 tablespoons olive oil

salt

pepper

 

Directions

Heat your BBQ to about 400 degrees.

Rinse your Brussels sprouts. Cut the ends off and slice in half lengthwise.

Push the Brussels sprouts onto soaked skewers leaving enough room on the bottom to handle.

Repeat with as many skewers as you like. A pound of Brussels sprouts will make about 3 or 4.

Once all is skewered, place everything on a large enough piece of foil to cover everything and drizzle the olive oil on. Add salt and pepper to taste.

Close the foil loosely around the skewers.

Cook on the grill for about 30 minutes - turning once.
