An Easy Weekday Meal Your Kids Will Eat – Maple Dijon Salmon

We love this recipe because it's simple enough that kids will like it - and parents are happy to eat it too. You only need 3 ingredients and it goes great with rice, couscous or barley. Can't get much easier than that during the busy week!

Maple Dijon Salmon *Makes 6 portions

What you need:
6 pieces of salmon
1/4 cup of pure maple syrup
1 tbsp Dijon mustard

Instructions:
Preheat oven to 400°F.
Place parchment paper on a baking sheet.
Place salmon on the baking sheet evenly spaced.
Using a pastry brush, lightly coat the salmon with the maple syrup and Dijon.
Bake salmon for 20 minutes. Half way through cooking time brush salmon with sauce again.
Serve 1 piece per person.
